Prepare the Lentils
Rinse the lentils under cold water and drain. Set aside.

Add Remaining Vegetables
Add the diced carrot, red bell pepper, and tomato to the pot. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are softened.

Combine Lentils and Broth
Stir in the rinsed lentils, vegetable broth, cumin powder, paprika, salt, black pepper, and bay leaves. Bring the mixture to a boil.

Simmer the Stew
Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 30-35 minutes, or until the lentils are tender. Stir occasionally and add more broth or water if necessary to prevent sticking.

Finish and Serve
Once the lentils are cooked, remove the bay leaves and stir in the chopped cilantro. Taste and adjust seasoning if necessary. Serve warm.
