Preparation of Figs

    Prepare the figs

    Preheat your oven to 200°C (400°F). Rinse the fresh figs under cold water and gently pat them dry with a paper towel.

    Stuff the figs

    Carefully make a small slit in each fig and stuff them with a piece of Cabrales cheese and an almond.

    Wrap in bacon

    Wrap each stuffed fig with a slice of bacon, securing it with a toothpick if necessary.

Cooking the Figs

    Bake the figs

    Place the wrapped figs on a baking sheet lined with parchment paper and bake in the preheated oven for 15-20 minutes, or until the bacon is crispy.

    Make the fig reduction

    While the figs are baking, prepare the fig reduction. In a saucepan, combine the fresh figs, honey, balsamic vinegar, and water.

    Cook the reduction

    Simmer the mixture over medium heat for about 10-15 minutes until the figs break down and the sauce thickens. Stir occasionally and mash the figs for a smoother consistency.

Serving

    Plate the dish

    Once the figs are done baking, remove them from the oven. Drizzle the fig reduction over the bacon-wrapped figs and serve warm.
