Figs Preparation

    Prepare the Figs

    Carefully rinse the fresh figs under cold water and pat them dry with a paper towel. Cut a small cross on the top of each fig, about halfway down, to make an opening.

    Stuff the Figs

    Using a small spoon or your fingers, stuff each fig with a piece of Cabrales cheese and a chopped almond.

Wrapping & Cooking

    Wrap Figs in Bacon

    Take one slice of bacon and wrap it around each stuffed fig. Secure it with a toothpick if necessary.

    Cook the Wrapped Figs

    In a large skillet, heat the olive oil over medium heat. Once hot, add the bacon-wrapped figs and sprinkle with black pepper. Cook for about 10-12 minutes, turning occasionally until the bacon is crispy and the figs are soft.

    Make the Fig Reduction

    In a saucepan, combine the chopped dried figs, balsamic vinegar, honey, and water. Bring to a boil over medium heat, then reduce the heat to low and let it simmer for about 15-20 minutes, or until the mixture thickens and reduces by half.

    Blend the Reduction

    Once thickened, remove from heat and use an immersion blender to puree the mixture until smooth. If you prefer a chunkier texture, you can skip this step.
