Preparation of Beans

Soak the Beans
In a large bowl, rinse the dried pinto beans under cold water. Remove any debris or damaged beans. Cover the beans with 6 cups of water and let them soak overnight, or for at least 6 hours.

Cook the Beans
After soaking, drain and rinse the beans. In a large pot, combine the beans with 6 cups of fresh water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low and simmer for about 1.5 to 2 hours, or until the beans are tender. Check occasionally and add more water if necessary to keep the beans submerged.

Add Spices
To the skillet with the onions and garlic, add 1 teaspoon each of cumin powder, smoked paprika, salt, and black pepper. Stir well to coat the aromatics with the spices and cook for another minute.

Finish with Fresh Ingredients
Remove from heat and stir in the chopped fresh cilantro and lime juice. Taste and adjust seasoning if necessary.
