Preparation

    Soak the Beans

    In a large bowl, soak the dried white beans in water for at least 8 hours or overnight.

    Chop the Meats

    While the beans are soaking, chop the chorizo, morcilla, and pork shoulder into bite-sized pieces. Set aside.

    Prep the Vegetables

    Finely chop the onion and garlic cloves. Peel and chop the carrot into small pieces.

Cooking

    Cook the Beans

    Drain and rinse the soaked beans. In a large pot, add the beans and 4 cups of fresh water. Bring to a boil, then reduce heat and simmer for about 1 hour until the beans are tender.

    Sauté the Meats

    In a separate pan, add the chopped chorizo, morcilla, and pork shoulder. Sauté over medium heat until browned.

    Add Vegetables and Flavors

    Add the chopped onion, garlic, and carrot to the pan with the meats. Sauté until the onion is translucent.

    Combine Everything

    Once the beans are tender, add the sautéed meat and vegetable mixture to the pot with the beans. Stir in the bay leaves, saffron, salt, and black pepper.

    Simmer the Stew

    Allow the stew to simmer for another 30 minutes, stirring occasionally, until all flavors meld together and the stew thickens.

    Garnish and Serve

    Remove from heat and stir in freshly chopped parsley. Serve hot with crusty bread.
