Peel and Slice Plantains
Peel the green plantains and slice them into thick chunks.

Boil Plantains
In a pot, bring water to a boil, add the sliced plantains, and cook for about 15 minutes until tender.

Mash Plantains
Drain and let the plantains cool slightly, then mash them in a bowl until smooth. Add salt and mix well.

Shape the Dough
Divide the mashed plantains into 6 equal portions. Flatten each portion into a circle about 1/4 inch thick.

Stuff the Empanadillas
Take one flattened portion of dough, place a generous tablespoon of the cheese filling in the center, and fold the dough over to create a half-moon shape. Press the edges to seal tightly.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium heat until hot.

Fry the Empanadillas
Carefully place the stuffed empanadillas in the hot oil and fry for about 3-4 minutes on each side, or until golden brown. Remove and drain on paper towels.
