    Prepare the Olives

    In a medium bowl, combine the green and black Spanish olives. If using whole olives, you may want to slightly crush them to release more flavor.

    Add Aromatics

    Mince the garlic cloves and add them to the bowl with the olives. Then, sprinkle the red pepper flakes and fresh oregano over the olives.

    Create the Marinade

    In a separate bowl, mix together the olive oil, red wine vinegar, salt, black peppercorns, and lemon zest. Whisk until well combined.

    Combine and Marinate

    Pour the marinade over the olives and toss gently to coat all the ingredients. Ensure all olives are submerged in the marinade.

    Marinate

    Cover the bowl with plastic wrap or transfer the olives to a jar with a lid. Refrigerate for at least 2 hours, but ideally overnight to allow the flavors to meld.

    Serve

    Before serving, bring the marinated olives to room temperature. Serve in a small dish or bowl as a delightful bar snack.
