Preparation of the Croquetas

    Make the Roux

    In a medium saucepan, melt the butter over medium heat. Once melted, add the all-purpose flour and whisk constantly for about 2-3 minutes until it turns a light golden color.

    Gradually pour in the milk while continuing to whisk to prevent lumps. Keep whisking until the mixture thickens, about 5-7 minutes.

    Season the Mixture

    Add in the nutmeg, salt, and black pepper. Stir to combine.

    Incorporate Ham and Cheese

    Fold in the chopped ham and grated cheese until well incorporated. Remove from heat and transfer the mixture to a bowl. Cover with plastic wrap and refrigerate for at least 2 hours or until firm.

Forming and Frying the Croquetas

    Once the mixture is firm, scoop out a tablespoon of the mixture and shape it into a small cylinder or ball. Repeat with the remaining mixture.
