Cooking Instructions
- 1
Prepare the Ingredients
Begin by slicing the Spanish chorizo into thick rounds about 1 cm each. Slice the morcilla into similar thickness. Set aside.
- 2
Heat the Grill
Preheat your grill or grill pan over medium-high heat. If using a charcoal grill, ensure the coals are evenly heated.
- 3
Prepare the Garlic
While the grill is heating, peel the garlic cloves but keep them whole. This will infuse flavor into the sausages as they grill.
- 4
- 5
Grill the Morcilla
After the chorizo is done, place the morcilla slices on the grill along with the whole garlic cloves. Grill for about 3-4 minutes on each side. Be cautious, as morcilla can be more delicate and may break apart easily.
- 6
Add the Garlic
During the last minute of grilling, add the whole garlic cloves to the grill to roast them slightly for added flavor.
- 7
Serve the Dish
Once both the chorizo and morcilla are cooked through, remove them from the grill. Arrange them on a serving platter, sprinkle with chopped parsley, and serve with lemon wedges on the side for squeezing over the sausages.
