    Prepare the Ingredients

    Slice the chorizo sausage into 1/2 inch thick rounds. Finely chop the onion and mince the garlic cloves. Set aside.

Cooking

    Sauté the Chorizo

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced chorizo and sauté for about 5 minutes, or until the chorizo starts to brown.

    Add Aromatics

    Add the chopped onion and minced garlic to the skillet. Continue to sauté for an additional 3-4 minutes, or until the onion becomes translucent.

    Deglaze with Wine

    Pour in the red wine and add the bay leaves and black peppercorns. Stir well to combine, scraping up any browned bits from the bottom of the skillet.

    Simmer

    Reduce the heat to low and let the mixture simmer for about 15-20 minutes, or until the sauce has thickened slightly and the flavors have melded together.

Garnishing

    Finish and Serve

    Remove the bay leaves from the skillet. Sprinkle the dish with freshly chopped parsley before serving. Enjoy the chorizo al vino warm.
