Preparation of Anchovies

Clean the Anchovies
Rinse the white anchovies under cold water to remove any excess salt. Pat them dry with a clean kitchen towel.

Remove the Heads and Bones
Using a sharp knife, carefully remove the heads of the anchovies. Then, gently open the anchovies and remove the backbone, ensuring you keep the fillets intact.
Marination Process

Prepare the Marinade
In a non-reactive bowl, combine the white wine vinegar and salt. Stir until the salt is dissolved.

Marinate the Anchovies
Place the cleaned anchovies in the vinegar mixture, ensuring they are fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Finishing Touches

Prepare the Garnish
Finely chop the garlic cloves and parsley. If using, slice the lemon and set aside.

After marinating, drain the anchovies and place them in a serving dish. Drizzle with extra virgin olive oil, sprinkle with garlic, parsley, and red chili flakes (if using). Garnish with lemon slices.
