    Prepare the Ingredients

    Chop the onion, green bell pepper, and cilantro. Mince the garlic. Cube the ham if not already done.

    Rinse the Rice

    In a fine-mesh strainer, rinse the long-grain white rice under cold water until the water runs clear. This helps remove excess starch.

Cooking

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onion, green bell pepper, and minced garlic. Sauté for about 5 minutes until the vegetables are softened.

    Add Ham and Sofrito

    Stir in the cubed ham and sofrito, cooking for another 3-4 minutes until fragrant.

    Incorporate Spices

    Add the bay leaves, salt, black pepper, and sazon seasoning, stirring well to combine.

    Add Rice and Pigeon Peas

    Add the rinsed rice and pigeon peas to the pot. Stir to coat the rice and peas evenly with the mixture.

    Pour in Chicken Broth

    Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce heat to low and cover the pot.

    Cook the Rice

    Let the rice cook on low heat for about 20-25 minutes, or until the liquid is absorbed and the rice is tender. Avoid lifting the lid during cooking.

    Fluff and Serve

    Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork, garnish with chopped cilantro, and serve warm.
