Prepare the Cauliflower
Cut the cauliflower into bite-sized florets.

Stir-fry the Vegetables
In a large pan or wok, heat peanut oil over medium-high heat. Add minced garlic and grated ginger, sauté for about 30 seconds until fragrant. Add cauliflower florets, red bell pepper, and green bell pepper. Stir-fry for about 5-7 minutes until the vegetables are tender.

Make the Sauce
In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, cornstarch, and red pepper flakes until smooth.

Combine and Serve
Pour the sauce over the stir-fried vegetables. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens. Stir in the unsalted roasted peanuts and sliced scallions before serving.
