Method

Preparing the Fries

  1. 1

    Cutting the Potatoes

Wash and cut the russet potatoes into thin strips to resemble fries.

  2. 2

    Frying the Potatoes

In a large bowl, toss the cut potatoes with olive oil and salt. Preheat the oven to 425°F (220°C) and spread the fries on a baking sheet. Bake for 25-30 minutes until golden and crispy, flipping halfway through.

Caramelizing the Onions and Mushrooms

  1. 3

    Cooking the Onions

In a skillet over medium heat, add sliced onions and cook until soft and caramelized, about 15-20 minutes.

  2. 4

    Adding the Mushrooms

Add the sliced mushrooms to the skillet and cook for an additional 5-7 minutes until the mushrooms are tender.

Making the Cheese Sauce

  1. 5

    Creating the Roux

In a saucepan over medium heat, melt the butter. Add the flour and whisk continuously for about 2 minutes until it turns a light golden color.

  2. 6

    Adding Milk and Cheese

Gradually whisk in the milk, stirring constantly until the mixture thickens. Remove from heat and stir in the shredded cheddar cheese, salt, and black pepper until smooth.

Assembly

  1. 7

    Combining the Ingredients

On a serving plate, layer the baked fries, top with caramelized onions, mushrooms, and cheddar curds. Drizzle the hot cheese sauce over the top.
