Pork Preparation

Season and Sear
In a large bowl, mix together brown sugar, paprika, salt, black pepper, garlic powder, and onion powder. Rub this mixture all over the pork butt. Heat a large skillet over medium-high heat and sear the pork on all sides until browned.

Braise the Pork
Transfer the seared pork to a slow cooker. Pour apple cider vinegar and chicken broth over the pork. Cover and cook on low for 8 hours or until the pork is tender and easily shreddable.
Balsamic Onion Marmalade

Cook the Onions
In a large skillet, heat olive oil over medium heat. Add sliced onions and cook until softened, about 10 minutes.

Add Balsamic and Sugar
Stir in balsamic vinegar and brown sugar. Cook until the mixture has thickened and the onions are caramelized, about 15-20 minutes. Set aside.
Sandwich Assembly

Assemble the Sandwich
Shred the cooked pork and mix it with some of the braising liquid. Toast the grilled rolls and pile on the pulled pork, top with balsamic onion marmalade and coleslaw if desired. Serve immediately.
