Method

For the Fresh Cut Fries

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into 1/4 inch thick fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the fries and pat them dry with a paper towel. Fry the potatoes in batches for 5-7 minutes until they are golden and crispy. Remove and drain on paper towels.

    Season

    Sprinkle the hot fries with salt to taste.

For the Housemade Blackberry Ketchup

    Blend Ingredients

    In a saucepan, combine the blackberries, tomato paste, apple cider vinegar, brown sugar, onion powder, garlic powder, and salt.

    Simmer

    Cook over medium heat for 15-20 minutes, stirring occasionally until the mixture thickens.

    Blend and Cool

    Blend the mixture until smooth, then let it cool before serving.

For the Truffled Mayonnaise

    Mix Ingredients

    In a bowl, combine mayonnaise, truffle oil, lemon juice, and salt. Mix well until smooth.
