Picosas Preparation

Make the Picosas Base

In a large bowl, combine the all-purpose flour, cornmeal, baking powder, and salt. Gradually add water and mix until a smooth batter forms.

Fry the Picosas

Heat vegetable oil in a deep frying pan over medium-high heat. Once hot, drop spoonfuls of the batter into the oil and fry until golden brown, about 3-4 minutes. Remove and let drain on paper towels.

Sauce Preparation

Prepare Spicy Buffalo Sauce

In a small saucepan over medium heat, melt the butter. Once melted, stir in the hot sauce, garlic powder, and cayenne pepper. Mix well and simmer for 5 minutes.

Prepare Garlic Parmesan Sauce

In another saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes. Stir in the grated Parmesan and chopped parsley. Remove from heat once the cheese is melted.

Make Cajun Rub

In a small bowl, combine paprika, onion powder, garlic powder, cayenne pepper, thyme, oregano, and salt. Mix well to create the rub.

Prepare Ranch Dressing

In a mixing bowl, combine mayonnaise, sour cream, buttermilk, garlic powder, dill, and salt. Whisk until smooth and refrigerate until ready to serve.

Serving

Serve the Picosas

Once the Picosas are fried and drained, toss them in the Cajun rub for an added kick. Serve hot with the Spicy Buffalo Sauce, Garlic Parmesan Sauce, and Ranch Dressing on the side.
