Prepare the Salmon
Preheat the oven to 400°F (200°C). In a baking dish, place the salmon fillets and pour the white wine over them. Drizzle with olive oil, and season with salt and black pepper. Bake for 15-20 minutes or until the salmon is fully cooked and flakes easily with a fork.

Prepare the Wrap
While the salmon is baking, chop the green onions and cilantro. In a bowl, combine the spinach, coleslaw mix, green onions, and cilantro.

Assemble the Wrap
Once the salmon is done, let it cool slightly. Flake the salmon and place it on the spinach and coleslaw mixture. Drizzle with Bang Bang sauce, and toss gently to combine. Spoon the mixture onto a large tortilla or wrap, roll tightly, and slice in half.

Serve
Serve the gourmet salmon wraps immediately, garnished with additional green onions or cilantro if desired.
