Prepare the Chipotle Aioli
In a small bowl, combine mayonnaise, chipotle peppers in adobo sauce, and lemon juice. Mix until smooth and set aside.

Set Up Breading Station
In one bowl, place the buttermilk. In another bowl, mix together flour, cornmeal, cayenne pepper, garlic powder, salt, and black pepper.

Coat the Pickles
Dip each dill pickle chip first into the buttermilk, allowing the excess to drip off, then dredge in the flour mixture until fully coated.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Pickles
Carefully add the coated pickle chips to the hot oil in batches. Fry until golden brown and crispy, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

Serve the fried pickle chips hot with the chipotle aioli dipping sauce on the side.
