Preparation Instructions
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper. Dredge each chicken breast in flour, dip into beaten eggs, and then coat with bread crumbs.
- 2
Cook the Chicken
In a large skillet, heat the olive oil over medium heat. Add the breaded chicken breasts and cook until golden brown, about 4-5 minutes per side. Once cooked, place the chicken on a baking sheet and top each piece with vodka sauce and fresh mozzarella. Sprinkle with parmesan cheese.
- 3
Bake the Chicken
Bake in the preheated oven for about 15 minutes, or until the cheese is melted and bubbly.
- 4
Assemble the Sandwich
While the chicken is baking, slice the hero bread. Once the chicken is done, place a piece on each hero, drizzle with basil pesto, and close the sandwich.
- 5
Serve
Cut the sandwiches in half and serve warm.
