Prepare the Cauliflower
Cut the cauliflower into bite-sized florets and set aside.

In a mixing bowl, combine flour, cornstarch, baking powder, salt, and garlic powder. Gradually add water, whisking until the batter is smooth.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Cauliflower
Dip each cauliflower floret into the batter, ensuring it is fully coated.

Fry the Cauliflower
Carefully place the coated cauliflower florets into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 4-5 minutes.

Drain and Toss
Remove the fried cauliflower from the oil and place on a paper towel-lined plate to drain excess oil. In a large bowl, toss the fried cauliflower with your choice of wing sauce until well coated.
