    Wash and scrub the Russet potatoes thoroughly. Cut them into wedges, keeping the skin on for extra texture and flavor.

    Soak the Potatoes

    Place the potato wedges in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

    Toss with Oil and Seasonings

    In a large mixing bowl, toss the dried potato wedges with truffle oil, salt, and black pepper until evenly coated.
