    Prepare the Vegetables

    Slice the carrots, cucumbers, and red onion into thin strips. Cut the cauliflower into small florets.

    Make the Brine

    In a saucepan, combine water, white vinegar, sugar, and salt. Add the arbol chilies, garlic cloves, black peppercorns, and mustard seeds. Bring to a boil, then reduce heat and simmer for 5 minutes.

    Combine and Cool

    Remove the brine from heat and let it cool slightly. Pour the warm brine over the prepared vegetables in a jar, ensuring the vegetables are fully submerged.

    Add Olive Oil

    Drizzle olive oil over the top of the pickled vegetables and seal the jar.

    Refrigerate

    Place the jar in the refrigerator for at least 24 hours before serving to allow the flavors to meld.
