Prepare the Dirty Rice
In a pot, heat 1 tablespoon of olive oil over medium heat. Add the dirty rice and stir to combine. Cook for about 5-7 minutes until lightly toasted. Add water according to the rice package instructions, season with salt and pepper, cover, and simmer until the rice is cooked through.

Prepare the Quail
Preheat the oven to 375°F (190°C). Clean the quail and season them inside and out with salt, pepper, garlic powder, and onion powder.

Stuff the Quail
Once the dirty rice is cooked, let it cool slightly, then stuff each quail with the rice mixture until they are filled. Use toothpicks to secure the openings.

Cook the Quail
In an oven-safe skillet, heat the remaining olive oil over medium-high heat. Sear the stuffed quail on all sides until golden brown, about 3-4 minutes per side. Transfer the skillet to the preheated oven and roast for 15-20 minutes until the quail are cooked through.

Prepare the Hot Sauce Jus
In a small saucepan, combine hot sauce and a little water. Heat over low heat until warmed through.

Serve
Slice the quail and serve on a plate alongside the pickled onions and sweet bell peppers. Drizzle with hot sauce jus.
