Batter and Fish
Method
Preparation of Batter and Fish
Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk together until well mixed.
Add the Beer
Slowly pour in the beer while whisking, ensuring no lumps form. Continue whisking until the batter is smooth and has a thick consistency. Set aside for about 10 minutes.
Prepare the Fish
While the batter rests, pat the fish fillets dry with paper towels. This helps the batter adhere better. Season both sides of the fish with salt and black pepper.
Heat the Oil
In a deep frying pan or a deep fryer, pour in the vegetable oil. Heat over medium-high heat until the oil reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.
Batter the Fish
Dip each fish fillet into the batter, ensuring it is fully coated. Allow excess batter to drip off before frying.
Fry the Fish
Carefully place the battered fish into the hot oil, being cautious not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Use a slotted spoon to remove the fish and place it on a plate lined with paper towels to drain excess oil.
