Cook the Pasta

In a large pot of boiling salted water, cook the cavatappi pasta according to package instructions until al dente. Drain and set aside.

Prepare the Mornay Sauce

In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute. Gradually whisk in the milk, stirring constantly until the mixture thickens, about 5-7 minutes.

Add the Cheese

Reduce the heat to low and stir in the Gruyère and white cheddar cheeses until melted and smooth. Add truffle oil, salt, and black pepper to taste.

Combine Pasta and Sauce

Fold the cooked cavatappi into the cheese sauce until well coated. Transfer the mixture to a greased baking dish.

Prepare Topping

In a bowl, mix the panko breadcrumbs with the grated Parmesan cheese. Sprinkle this mixture evenly over the mac and cheese.

Bake

Preheat the oven to 350°F (175°C). Bake for about 20-25 minutes, or until the top is golden brown and crispy.

Garnish and Serve

Remove from the oven and let it sit for a few minutes. Top with shaved black truffle before serving.
