Prepare the Chicken

Season the chicken cutlets with salt and black pepper. Heat olive oil in a large skillet over medium heat. Sauté the chicken cutlets for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and set aside.

Make the Marinara Ragout

In the same skillet, pour in the marinara sauce and bring to a simmer. Add the sautéed chicken back to the skillet, spooning the sauce over the cutlets. Let it cook for an additional 2-3 minutes.

Prepare the Caprese Style Toppings

While the chicken is simmering, slice the heirloom tomatoes and fresh mozzarella cheese. Set aside.

Assemble the Dish

On a serving plate, place a chicken cutlet topped with marinara sauce. Layer with sliced heirloom tomatoes, fresh mozzarella, and basil leaves. Drizzle with sherry vinaigrette.
