Moujadara

    Prepare Lentils

    Rinse the lentils under cold water and drain.

    Sauté Onions

    In a pot, heat the olive oil over medium heat. Add chopped onions and sauté until golden brown.

    Cook Lentils

    Add the rinsed lentils and water to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.

    Combine Ingredients

    Stir in the rice, cumin, salt, and black pepper. Cover and cook on low for 20 minutes until rice and lentils are tender.

Salad

    Chop Vegetables

    Chop the cucumber, tomatoes, and red onion into bite-sized pieces.

    Mix Ingredients

    In a bowl, combine chopped vegetables with parsley.

    Dress Salad

    Drizzle lemon juice and olive oil over the salad. Season with salt and pepper to taste.

Falafel

    Prepare Chickpeas

    Soak dried chickpeas in water overnight, then drain.

    Make Mixture

    In a food processor, blend soaked chickpeas, onion, garlic, parsley, cumin, and salt until a coarse mixture forms.

    Shape Falafel

    Add baking soda and mix well. Form into small balls.

    Fry Falafel

    Heat vegetable oil in a deep pan over medium-high heat. Fry falafel until golden brown on all sides.

Grape Leaves

    Prepare Grape Leaves

    Rinse grape leaves in warm water to remove excess salt. Set aside.

    Cook Filling

    In a pan, heat olive oil and sauté finely chopped onion until translucent. Stir in rice, salt, pepper, and lemon juice.

    Stuff Grape Leaves

    Place a spoonful of the rice mixture on each grape leaf and roll tightly. Place rolled grape leaves in a pot.

    Cook Grape Leaves

    Cover with water and simmer on low heat for about 30 minutes.

Hummus

    Blend Ingredients

    In a food processor, combine canned chickpeas, tahini, garlic, lemon juice, and salt.

    Adjust Consistency

    While blending, drizzle in olive oil and water until desired consistency is reached.

    Serve Hummus

    Taste and adjust seasoning if necessary. Serve with a drizzle of olive oil on top.
