Meat Preparation

    Marinate the Meats

    In a large bowl, combine the chicken thighs and beef sirloin. In a separate bowl, mix together ground cumin, ground coriander, paprika, turmeric, cinnamon, garlic powder, black pepper, salt, olive oil, and lemon juice to form a marinade. Pour the marinade over the meats and toss to coat evenly. Cover and refrigerate for at least 1 hour, preferably overnight.

    Cook the Meats

    Preheat a grill or skillet over medium-high heat. Grill the marinated chicken for about 6-8 minutes per side, or until fully cooked and juices run clear. Remove from heat and let rest. Grill the beef for about 2-3 minutes per side, or until desired doneness is reached. Remove from heat and let rest.

Sauce Preparation

    Make the Garlic Sauce

    In a mixing bowl, combine the minced garlic, tahini, water, olive oil, lemon juice, and salt. Whisk together until smooth and creamy. Adjust the water for desired consistency if necessary.

Assembly

    Assemble the Shawarma

    Slice the grilled chicken and beef into thin strips. Take a piece of pita or flatbread, and layer with the sliced meats. Top with garlic sauce, sliced cucumbers, sliced tomatoes, and garnish with fresh parsley. Wrap or fold the bread to enclose the fillings.

    Serve the shawarma immediately, accompanied by extra garlic sauce on the side.
