Method

Prepare Falafel Mixture

    Soak Beans

    Soak the fava beans and chickpeas in water overnight. Drain and rinse before using.

    Blend Ingredients

    In a food processor, combine soaked fava beans, chickpeas, onion, garlic, cilantro, parsley, cumin, coriander, baking powder, salt, and black pepper. Pulse until coarsely blended.

    Add Flour

    Transfer the mixture to a bowl and add flour. Mix until well combined. Let it rest for 30 minutes.

Fry Falafel

    Heat Oil

    In a deep pan, heat vegetable oil over medium-high heat until hot.

    Shape and Fry

    Shape the falafel mixture into small balls or patties and carefully place them in the hot oil. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Make Tahini Sauce

    Mix Ingredients

    In a bowl, whisk together tahini, lemon juice, minced garlic, and water until smooth. Add salt to taste.

Assemble Pita-Wiches

    Prepare Pitas

    Cut the pitas in half to create pockets.

    Fill Pitas

    Stuff each pita half with fried falafel, sliced tomatoes, and drizzle with tahini sauce. Garnish with fresh parsley.

    Serve

    Serve immediately while warm with extra tahini sauce on the side.
