Method

Hummus

    Prepare Chickpeas

    Rinse the chickpeas and soak them in water overnight.

    Blend Ingredients

    In a food processor, combine soaked chickpeas, tahini, garlic, lemon juice, olive oil, salt, and water.

    Blend to Smoothness

    Process until smooth, adding more water if necessary. Adjust seasoning to taste.

    Serve Hummus

    Transfer to a serving bowl and drizzle with olive oil. Sprinkle paprika on top before serving.

Baba Ghannouj

    Roast Eggplant

    Preheat the oven to 400°F (200°C). Cut the eggplant in half and place it on a baking sheet.

    Cook Eggplant

    Roast for about 30-40 minutes, until the skin is charred and the flesh is soft.

    Combine Ingredients

    Scoop out the flesh and place it in a food processor with tahini, garlic, lemon juice, olive oil, salt, and cumin.

    Blend to Smoothness

    Blend until smooth and adjust seasoning as needed.

    Transfer to a serving bowl and drizzle with olive oil before serving.

Falafels

    Prepare Chickpeas

    Soak dried chickpeas in water for at least 8 hours or overnight.

    In a food processor, combine soaked chickpeas, onion, garlic, parsley, cumin, coriander, and salt.

    Pulse until the mixture is grainy, then add baking powder and mix well.

    Form into small balls (about 1 inch) and refrigerate for 30 minutes.

    Heat oil in a deep pan over medium heat. Fry falafels in batches until golden brown.

Veggie Grape Leaves

    Repeat until all grape leaves are filled. Place them seam side down in a pot.

Tabbouleh

    Soak bulgur wheat in cold water for about 30 minutes, then drain well.

    In a bowl, combine soaked bulgur, diced tomato, cucumber, parsley, mint, lemon juice, olive oil, and salt.

    Toss everything together until well combined. Adjust seasoning to taste.
