Method
For the Meat Kabobs
- 1
Prepare the Marinade
In a bowl, combine the olive oil, minced garlic, lemon juice, ground cumin, paprika, salt, and black pepper. Mix well.
- 2
Marinate the Meat
Cut the beef tenderloin or lamb into 1-inch cubes. Add the meat to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 1 hour or up to overnight.
- 3
Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, they can be used directly.
- 4
Assemble the Kabobs
Thread the marinated meat onto the skewers, leaving some space between each piece.
- 5
For the Hummus
- 6
Prepare the Chickpeas
Drain and rinse the canned chickpeas under cold water.
- 7
Blend the Ingredients
In a food processor, combine the chickpeas, tahini, minced garlic, lemon juice, olive oil, salt, ground cumin, and water. Blend until smooth and creamy.
- 8
Adjust Consistency
If the hummus is too thick, add more water a tablespoon at a time until the desired consistency is achieved.
- 9
Serve the Hummus
Transfer the hummus to a serving bowl, drizzle with olive oil, and sprinkle with paprika before serving.
