Method

Preparation

  1. 1

    Prepare the Marinade

In a mixing bowl, combine olive oil, minced garlic, lemon juice, ground cumin, paprika, salt, black pepper, and dried oregano. Whisk until well mixed.

  2. 2

    Marinate the Meat

Cut the lamb or beef tenderloin into 1-inch cubes. Place the meat in a resealable plastic bag or bowl, pour the marinade over, and ensure all pieces are coated. Seal the bag or cover the bowl and refrigerate for at least 1 hour (up to overnight for more flavor).

  3. 3

    Prepare Vegetables (Optional)

If using, cut the bell peppers, onion, and cherry tomatoes into chunks. Set aside.

Grilling

  1. 4

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C). If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

  2. 5

    Assemble the Skewers

Thread the marinated meat onto the skewers, alternating with chunks of bell peppers, onion, and cherry tomatoes if using. Fill each skewer with 6-8 pieces of meat and vegetables.

  3. 6

    Grill the Kabobs

Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the meat is browned and cooked to your desired doneness (145°F for medium-rare lamb or beef).

  4. 7

    Rest and Serve

Remove the kabobs from the grill and let them rest for 5 minutes before serving. Enjoy your meat kabobs with your favorite side dishes!
