Preparation
Prep the Vegetables
Wash the green beans thoroughly and trim the ends. Chop the tomatoes into small cubes. Peel and finely chop the onion. Peel and mince the garlic cloves.
Cooking
Sauté the Onions
In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until the onion becomes translucent.
Cook the Green Beans
Add the cleaned green beans to the skillet. Season with 1 teaspoon of salt and 1 teaspoon of black pepper. Stir well to coat the beans with the tomato mixture.
Simmer
Cover the skillet and reduce the heat to low. Let the mixture simmer for 15-20 minutes, until the green beans are tender but still crisp.
Serve
Remove from heat and serve the green beans warm as a side dish.
