Chicken Marinade Preparation

Prepare the Chicken
Cut the chicken breast into 1-inch cubes and place them in a large mixing bowl.

Marinate the Chicken
Pour the marinade over the chicken cubes and toss to coat evenly. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.

Prepare the Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken onto skewers, interspersing with pickles if desired.

Preheat the Grill
Preheat your grill to medium-high heat.

Roast the Garlic
While the chicken is grilling, prepare the roasted garlic sauce. Preheat the oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in aluminum foil, and roast for 30-35 minutes until soft.

Make the Roasted Garlic Sauce
Once the garlic is cool enough to handle, squeeze the cloves into a bowl. Add mayonnaise, lemon juice, salt, black pepper, and water. Mix until smooth.

Serve
Remove the chicken from the grill and let it rest for a few minutes. Serve the chicken kabobs with the roasted garlic sauce on the side.
