Marinade Preparation

Prepare the Marinade
In a large bowl, combine minced garlic, ground cumin, ground coriander, ground paprika, ground turmeric, ground cinnamon, olive oil, lemon juice, salt, and black pepper. Mix well.

Marinate the Beef
Add the thinly sliced beef to the marinade, ensuring all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.
Cooking the Beef

Prepare the Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning. For vertical cooking, prepare a vertical rotisserie or use an oven broiler.

Assemble the Skewers
Thread the marinated beef slices onto the skewers, packing them tightly together.

Cook the Beef
Cook the skewers on a vertical rotisserie or under the broiler for 15-20 minutes, turning occasionally until the beef is cooked through and slightly charred.

Prepare to Serve
Warm the pita bread in a pan or microwave. Slice the cooked beef thinly.

Place sliced beef into the warm pita bread, and top with diced tomatoes, cucumbers, and chopped parsley. Drizzle with tahini sauce.
