Prepare the Pistachio Streusel

In a mixing bowl, combine chopped pistachios, flour, sugar, and a pinch of salt. Mix well. Add melted butter and mix until crumbly. Spread on a baking sheet and bake at 180°C (350°F) for 10-12 minutes until golden. Let cool.

Toast the Brioche

In a skillet, melt butter over medium heat. Add brioche slices and toast until golden brown on both sides. Remove from heat.

Cook the Foie Gras

In the same skillet, add the foie gras slices. Sear for about 1-2 minutes on each side until golden and cooked through. Remove from heat.

Assemble the Dish

On each toasted brioche slice, spread a layer of apple butter. Top with a piece of seared foie gras. Drizzle aged balsamic vinegar over the top and sprinkle with pistachio streusel.

Serve

Plate the assembled brioche slices and serve immediately while warm.
