Zabaglione

Whisk Egg Yolks and Sugar
In a large mixing bowl, whisk together 4 egg yolks and 100g of granulated sugar until the mixture is pale and fluffy.

Add Wine and Cook
Gradually add 120ml of sweet white wine while continuously whisking. Place the bowl over a pot of simmering water (double boiler) and whisk vigorously for about 8-10 minutes until the mixture becomes thick and creamy.

Cool the Zabaglione
Once thickened, remove from heat and allow the zabaglione to cool slightly before serving.

Segment the Oranges
Peel and segment the 2 oranges, removing any seeds and pith. Set aside the segments in a bowl.

Sweeten the Oranges
Sprinkle 50g of granulated sugar over the orange segments and gently toss to coat. Let them sit for about 10 minutes to allow the juices to release.

Add Mint and Lemon Zest
Finely chop 5 fresh mint leaves and mix them with the orange segments along with 1 tsp of lemon zest for added flavor.

Just before serving, prepare the garnish by setting aside 2 mint leaves and 1 tsp of orange zest.
