    Make the Pasta Dough

    In a large bowl, mix the flour and a pinch of salt. Create a well in the center and add the eggs. Gradually mix the flour into the eggs until a dough forms. Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a mixing bowl, combine the blue crab meat, ricotta cheese, chopped parsley, lemon zest, salt, and black pepper. Mix until well combined.

    Roll Out the Pasta

    After the dough has rested, divide it into four pieces. Roll out each piece using a pasta machine or a rolling pin until very thin.

    Form the Ravioli

    Place small spoonfuls of the crab filling about 1 inch apart on half of the rolled-out pasta. Brush the edges with water and fold the other half over, pressing to seal. Cut between the filling to form individual ravioli.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Cook the ravioli in batches for 3-4 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

    Make the Calamansi Butter

    In a saucepan, melt 1/2 cup of butter over medium heat. Add the juice of 2 calamansi fruits (or lime juice if unavailable) and stir to combine. Season with salt and pepper.

    Serve

    Toss the cooked ravioli gently in the calamansi butter. Serve immediately, garnished with additional parsley and a sprinkle of sorghum.
