    Prepare the Beans

    Rinse the pinto beans under cold water and soak them in a large bowl of water overnight or for at least 6 hours. Drain and set aside.

    Cook the Bacon

    In a large pot or Dutch oven, cook the smoked bacon over medium heat until crispy. Remove the bacon, leaving the drippings in the pot. Chop the bacon into small pieces and set aside.

    Sauté Vegetables

    Add the chopped onion to the bacon drippings and sauté for about 5 minutes until the onion is translucent. Add minced garlic and sauté for an additional 1-2 minutes.

    Combine Ingredients

    Add the soaked and drained beans, chopped bacon, brown sugar, ketchup, apple cider vinegar, mustard, Worcestershire sauce, smoked paprika, salt, and black pepper to the pot. Stir well to combine all ingredients.

    Simmer

    Pour in enough water to cover the beans by about an inch. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 1.5 to 2 hours, or until the beans are tender.

    Serve

    Once the beans are tender, taste and adjust seasoning if necessary. Serve hot as a side dish.
