Method
Preparation
- 1
Prepare the Chicken
In a large bowl, combine flour, cornstarch, cayenne pepper, paprika, salt, and black pepper. In another bowl, soak the chicken tenders in buttermilk for at least 30 minutes.
- 2
Batter the Chicken
Remove the chicken from the buttermilk and let the excess drip off. Dredge each tender in the flour mixture, ensuring they are well coated.
- 3
Fry the Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Fry the chicken tenders in batches for about 5-7 minutes per side or until golden brown and cooked through. Remove and let drain on paper towels.
- 4
Mix the Hot Sauce
In a small bowl, combine hot sauce and a tablespoon of the frying oil to create a spicy sauce.
- 5
Prepare the Cayenne Mayo
In another bowl, mix mayonnaise with cayenne pepper to taste.
- 6
Assemble the Sliders
Spread cayenne mayo on the bottom half of each slider bun. Place a fried chicken tender on each bun, top with lettuce and pickles, and finish with the top half of the bun.
- 7
Serve
Serve the sliders warm with additional hot sauce on the side if desired.
