Prepare the Breading
In a shallow dish, combine all-purpose flour, cornmeal, Old Bay seasoning, salt, and black pepper.

Coat the Fish
Dip each fish fillet (haddock, cod, and perch) into the egg wash, letting excess drip off, then coat thoroughly in the breading mixture.

Heat the Oil
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fish
Carefully add the coated fish fillets to the hot oil in batches, frying for about 4-5 minutes on each side or until golden brown and cooked through.

Drain and Serve
Remove the fried fish from the oil and place on paper towels to drain. Serve immediately with lemon wedges and tartar sauce.
