    Prepare the batter

    In a medium bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper. Gradually add ice-cold water, whisking until smooth. The batter should be thick enough to coat the back of a spoon.

    Heat the oil

    In a deep skillet or frying pan, heat the cooking oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and bubbles, it’s ready.

    Coat the cod

    Dip each piece of Icelandic Cod fillet into the batter, ensuring it is fully coated.

    Fry the fish

    Carefully place the battered cod pieces into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy. Do not overcrowd the pan; fry in batches if necessary.

    Drain and serve

    Once cooked, remove the fish from the oil and place on a plate lined with paper towels to drain excess oil. Serve hot with lemon wedges and tartar sauce on the side.
