Prepare the Fish
Rinse the haddock, cod, and perch fillets under cold water and pat them dry with paper towels.

Make the Breading
In a shallow bowl, combine the flour, cornmeal, baking powder, salt, black pepper, and garlic powder. Mix well.

Bread the Fish
Dip each fish fillet into the wet mixture, allowing excess to drip off, then coat it in the breading mixture, pressing gently to adhere.

Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fish
Carefully place the breaded fish fillets in the hot oil, frying in batches if necessary. Cook for about 4-5 minutes on each side or until golden brown and cooked through.

Drain and Serve
Remove the fried fish from the oil and drain on paper towels. Serve hot with your choice of sides and tartar sauce.
