    Brisket Preparation

    Preheat your smoker or grill to 225°F (107°C). Rub the brisket with your choice of spice rub, ensuring it is evenly coated. Let it sit at room temperature for about 30 minutes.

    Pulled Pork Preparation

    Rub the pork shoulder with your choice of spice rub. Allow it to sit at room temperature for 30 minutes. Wrap tightly in plastic wrap and refrigerate for at least 4 hours or overnight for best results.

    Cooking the Brisket

    Place the brisket in the smoker or grill, fat side up. Smoke for about 1.5 hours per pound or until it reaches an internal temperature of 195°F (90°C). Wrap in butcher paper and let it rest for at least 30 minutes before slicing.

    Cooking the Pulled Pork

    Place the pork shoulder in the smoker or grill, fat side up. Smoke for about 1.5 hours per pound or until it reaches an internal temperature of 205°F (96°C). Remove from the heat and let it rest for at least 30 minutes before shredding.

    Slice the brisket against the grain and serve alongside the pulled pork. Optionally, serve with barbecue sauce, pickles, and coleslaw.
