    Prepare the Coating

    In a bowl, mix the cornmeal, flour, paprika, salt, and black pepper together until well combined.

    Prepare the Catfish

    In a separate bowl, whisk together the egg and buttermilk. Dip each catfish fillet into the buttermilk mixture, allowing excess to drip off, then dredge in the cornmeal mixture, pressing lightly to adhere.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.

    Fry the Catfish

    Carefully place the coated catfish fillets in the hot oil. Fry for about 3-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
