Prepare the Battering Mixture
In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

Heat the Oil
In a deep frying pan or heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Fish and Shrimp
Dip the haddock fillets and shrimp into the batter, ensuring they are fully coated.

Fry the Fish and Shrimp
Carefully place the battered haddock and shrimp into the hot oil. Fry in batches, without overcrowding, for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to remove them and place them on paper towels to drain excess oil.

Serve the hand-battered haddock and shrimp hot with lemon wedges on the side for squeezing over the top.
