Prepare the Chicken
Preheat your smoker to 225°F (107°C). In a bowl, mix olive oil, salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this mixture all over the chicken breasts.

Smoke the Chicken
Place the seasoned chicken breasts in the smoker and smoke for about 2-3 hours, or until the internal temperature reaches 165°F (74°C). Brush the chicken with Carolina BBQ sauce in the last 30 minutes of smoking.

Prepare the Texas Toast
While the chicken is smoking, toast the Texas toast in a toaster or on a grill until golden brown and crispy.

Assemble the Dish
Once the chicken is done smoking, let it rest for a few minutes. Slice the chicken breasts and serve over the toasted Texas toast. Drizzle additional Carolina BBQ sauce on top, if desired.
