Cut the catfish fillets into bite-sized pieces and set aside.

Make the Batter
In a large bowl, combine cornmeal, flour, cayenne pepper, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

Soak the Catfish
Dip the cut catfish pieces into the buttermilk, ensuring they are well-coated.

Coat the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off, then dredge them in the cornmeal mixture until fully coated.

In a large skillet or deep fryer, heat oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Catfish Bites
Carefully add the coated catfish pieces to the hot oil in batches. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
