    Prepare the Chicken

    In a large bowl, soak the chicken pieces in buttermilk. Cover and refrigerate for at least 2 hours or overnight for better flavor.

    Make the Coating

    In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

    Coat the Chicken

    Remove the chicken from the buttermilk and allow excess to drip off. Dredge each piece in the flour mixture, ensuring they are well coated. Shake off any excess flour.

    Heat the Oil

    In a pressure fryer or large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Chicken

    Carefully add the chicken pieces to the hot oil, making sure not to overcrowd the pot. Fry for about 10-12 minutes until golden brown and cooked through, turning halfway.

    Drain and Serve

    Remove the chicken from the oil and place on a wire rack or paper towels to drain excess oil. Serve hot.
